Raspberry shortbread with 01 Pilsner Spent Grain Flour

Ingredients

150 g butter

200 g wheat flour

40 g 01 Pilsner Spent Grain Flour

1/2 vanilla pod or a pinch of vanilla powder

40 g icing sugar

1 tsp baking powder

1 egg

Raspberry jam

Glaze (icing sugar and water)

Sprinkles: the sky is the limit - try for example freeze-dried raspberries or use your imagination

Here's how

  1. Pour the flour into a bowl and crumble the butter into the flour.
  2. Add the icing sugar and vanilla and combine the dough with the egg.
  3. Place the dough in the fridge for about 1 hour.
  4. Preheat the oven to 175 °C (fan oven).
  5. Roll out the dough into a square.
  6. Then, divide the dough in half and bake the dough sheets on a baking tray lined with baking paper until golden - about 15 minutes.
  7. Let cool completely on a baking tray.
  8. Once cooled, spread raspberry jam on one sheet and the icing on the other - remember to decorate while the icing is still wet. Place the icing sheet on top of the jam sheet.
  9. Now cut it into smaller slices.
