3 dl lukewarm milk
40 g yeast
60 g 01 Pilsner Spent Beer Grain Flour
400 g wheat flour (preferably high protein tipo 00)
2 tsp salt
1 tsp sugar
50g soft butter
1 tbsp baking soda per 1 litre water
Dissolve the yeast in the lukewarm milk.
Mix 01 Pilsner Spent Beer Grain Flour with wheat flour, salt and sugar.
Mix the flour into the milk mixture a little at a time and finally add the softened butter.
Let the dough rise for 30 minutes on the kitchen table under a damp cloth.
Form the dough into 8 long sausages (approx. 60 cm) and fold them into pretzels.
Let the dough rise for another 30 minutes on the kitchen counter.
Then boil the pretzels for 1 minute in water with baking soda (about 1 tablespoon baking soda per litre of water). Bring the water to the boil and carefully lower the pretzels into the water one at a time.
Be sure to drain them well after cooking so that no baking soda foam remains on them.
Place the pretzels on a baking tray with baking paper and brush them with egg and sprinkle with salt or sesame seeds.
Bake at 180C (hot air) for about 15 minutes.
