1-1 1/2 hours (including baking time)

200g wheat flour
75 g 02 IPA Super Grain Flour
125 g brown flour
125 g soft butter
80 g dark syrup
1 tsp baking powder
1 tbsp cocoa powder (unsweetened)
1 tsp cinnamon
1 tsp ground cardamom
1 tsp black pepper
0,5 tsp ginger
Mix the wheat flour and 02 IPA Super Grain Flour and add all the spices to the flour mixture.
Whisk together the syrup, brown sugar, softened butter and eggs.
Now quickly mix the flour and egg mixture together. It should come together completely, but it will quickly become very soft and sticky, so it should not be kneaded.
Set the dough min. 30 minutes in the fridge before rolling out thinly between two pieces of baking paper.
Cut out the shapes a little apart so they don't melt together in the oven.
Bake 8-9 min at 175C convection oven.
Let the cakes cool on a wire rack, and when they are completely cool, they can be decorated with icing.
