13 hours (but of which 12 hours is rising time and 30 min in oven)

700 ml cold water
11 dl wheat flour (630 g)
2 dl Agrain® 02 IPA Super Grain Flour
1 large handful oats (60 g)
1 tbsp salt (18g)
1 tbsp soft honey (20g)
1 tsp cardamom (2.1g)
35 g yeast
1 tbsp oil (14g)
Mix water, salt, oil, honey, cardamom and yeast in the mixer (or in bowl and use hand mixer). Add Agrain® 02 Super Grain Flour (IPA), oats and wheat flour little by little. Mix thoroughly for about 4-5 minutes at medium speed.
Cover the dough with plastic wrap or a tea towel and leave to rise for about 12 hours in the refrigerator.
Use a table spoon to place the buns on a baking tray and pour 1 tbsp of water over each bun.
Bake immediately in oven at 210 degrees (hot air) for about 30 min.
If you want a dark bun with fuller taste, you can use Agrain Super Grain Flour 03 Stout instead of 02 IPA.
