80g sugar
110 g grounded butter
1 egg
180 g brown sugar
1.5 tsp baking powder
1 tsp cinnamon
1 tsp ground ginger
1 tsp cardamom
160 g wheat flour
160 g 02 IPA Mask flour
1/2 teaspoon salt
2.5 dl boiling water
Frosting
150g cream cheese
75g icing sugar
A little grated orange peel to the top
Turn the oven on 180 degrees hot air. Whisk the sugar and butter together in a bowl to an airy and creamy mass. Then add the eggs and brown the sugar and whisk well together. All the drying ingredients: Baking soda, spices, wheat flour, mask flour and salt are mixed together in a bowl. Add the dry mixture to the wet and whisk well together until the dough is smooth and even. Finally, add boiling water a little at a time until the mixture is smooth and glossy. Grease a shape (22 x 33 cm) and pour the dough into it. Bake the cake for about 30-35 minutes at 180 degrees – test whether the cake is finished by taking a meat needle or fork and carefully sticking in the cake. When there is no dough on the needle, the cake is finished. Cool the cake. Meanwhile, mix the frosting by whipping icing sugar together with cream cheese. Once the cake has cooled, divide the frost over the cake.
Add any grated orange peel or cinnamon stick on top.
