18-20 apple slices
4 dl buttermilk (a little extra to dissolve the soda in)
200g wheat flour
25 g 04 Whisky Mask flour
2 tbsp sugar
0.5 tsp salt
2 eggs - separated into yolks and whiter
1 tsp cardamom
1 tsp grated orange peel
1 tsp (with top) soda
Butter for frying
Pour the buttermilk into a bowl and add the wheat flour, mask flour, sugar and salt and mix together.
Add the egg yolks and mix back together.
Now whisk the whites until they are completely stiff and gently turn them into the dough along with cardamom and orange peel. Mix the soda in a small amount of buttermilk and gently turn together with the dough.
Warm up the apple slice pan well (just above medium heat) and put a dollob of butter in each hole. Put the dough in each hole - only just below the edge as they rise up. The first time they are turned, turn the apple slices upside down with a meat pin or knitting needle when they are light brown at the bottom. The apple slices should be baked on all sides, then turn them a few times before removing them from the pan (if you may want to gently open one of them to check if they are baked).
Serve them warm with icing sugar and jam.
