"Æbleskiver" with Agrain® 04 Whisky Super Grain Flour

4 dl buttermilk (a little extra to dissolve the baking soda in)

200g wheat flour

25 g Agrain® 04 Whisky Super Grain Flour

2 tbsp sugar

0.5 tsp salt

2 eggs - separated into yolks and whites

1 tsp cardamom

1 tsp grated orange peel

1 tsp (with top) baking soda

Butter for frying

Here's how

Pour the buttermilk into a bowl and add the wheat flour, Super Grain Flour, sugar and salt and mix together.

Add the egg yolks and mix it all together. 

Now whisk the whites until they are stiff and gently mix them with the dough along with cardamom and orange peel. Mix the baking soda in a small amount of buttermilk and gently mix together with the dough.

Warm up the "æbleskive" pan well (just above medium heat) and put a dollob of butter in each hole. Put a scoop of dough in each hole - but  just below the edge as they rise up. The first time they are turned, turn the æbleskiver upside down with a meat pin or knitting needle when they are light brown at the bottom. The æbleskiver should be baked on all sides, so turn them a few times before removing them from the pan (if you want to check if they are done, gently open one of them).

Serve them warm with powdered sugar and jam.
